No Bake Protein Cookie

I wanted to make a treat for the boys for Valentine’s, but I wanted to make it healthy. What’s a mom to do???

If only I could make a healthy, superfood filled, chocolate treat with only 4 real food ingredients.  Oh wait…I can!

No Bake Protein Cookies to the rescue!

What you need:

  • 2 scoops of Chocolate or Vegan Chocolate Shakeology
  • 1/2 cup quick oats
  • 1/2 cup peanut butter
  • 1 small banana, mashed

Combine Shakeology and oats in a large bowl; mix well. Add peanut butter and banana; mix well with a spatula or clean hands.  Place in an 8 x 8-inch pan that is lightly coated with coconut oil or spray. Cover with plastic wrap and press down to flatten into pan. Freeze for 3 hours.

I used a cookie cutter and cut out shapes before I froze them- this made 12 heart shaped cookies.  In the pan you can divide it into 12 bars.  You could also roll into 12 one inch balls.
